Crock Pot Lasagna

Ingredients:

  • 1 lb lean ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced or mashed)
  • 1 1/2 tsp salt
  • 1 tsp Italian seasoning
  • 2 cans (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • 12 oz lasagna noodles (uncooked)
  • 16 oz cottage cheese
  • 8 oz sour cream
  • 1/2 cup grated parmesan or asagio
  • 16 oz shredded mozzarella cheese

Directions:

  1. Brown ground beef in a large skillet, along with onion and garlic. Cook until onion is clear.
  2. Add salt, Italian seasoning, tomato sauce and tomato paste and let simmer.
  3. Mix cottage cheese, sour cream and parmesan in a separate bowl.
  4. Add a layer of meat mixture to bottom of Crock Pot.
  5. Add a layer of uncooked lasagna noodles (break to fit).
  6. Add a layer of cheese mixture and top with enough mozzarella to cover.
  7. Keep adding layers in order until ingredients run out.
  8. Cook on low for 3-4 hours.

Notes:

The number of layers you will add depends on the size/depth/width of the Crock Pot that you're using. This recipe is for a 6 qt Crock Pot, so you can adjust ingredients accordingly for a larger or smaller cooker.
